Chocolate Twix Cookies

I have died and gone to cookie heaven.  I’ve discovered a blogger with a sweet tooth the size of mine.  You may know of her already and be wondering why did it take me so long to find her.  Well, I’ve been asking myself the same question for days.  Here she is —, and she has a cookie recipe index a mile long.  I see lots of happiness in my future.

This cookie concoction is actually a marriage between her Twix Bar Cookie recipe and’s copycat Levain Dark Chocolate Peanut Butter Chip Cookies.  Here’s my madness:

  • 2 sticks cold and cubed unsalted butter
  • 1¼ cup granulated sugar
  • 2 eggs
  • ½ cup cocoa powder
  • 2¼ to 2½ cups all-purpose flour
  • 1 tablespoon cornstarch
  • ¼ teaspoon salt
  • 1 teaspoon baking powder
  • 1½ cups milk chocolate chips
  • ½ cup caramel bits
  • 18 fun-size Twix bars, chopped
In the bowl of an electric mixer fitted with a paddle attachment, cream together butter and sugar until well blended.  Add eggs and beat, then beat in cocoa powder.  Mix in flour, cornstarch, salt, and baking powder until just combined. Stir in the remaining ingredients.  Portion the dough into 4 ounce balls.  Chill them for about an hour before baking.  Bake in a 350 degree preheated oven for around 15 minutes, depending on how you like your cookies.
