The first time Matt came home talking about fish tacos, all I could think was “EWWWWW, that sounds disgusting.” I’ve since changed my mind.
There’s a restaurant in Greensboro, Crafted The Art of the Taco, that serves the best fish tacos. In fact, I’d venture to say that it serves the best tacos — period. They have combinations like duck confit, Napa cabbage, and hoisin BBQ sauce and Cajun fried shrimp, pico de gallo, Cajun sauce, and spicy pickles. But my personal favorite is what they call the ‘bowtie’. It’s made of beer battered fish, corn and poblano salsa, chipotle aioli, and honey mustard. Killer!
We’ve not been able to remake that version at home, but we’ve come up with a tasty fish taco a la Mitchell that’s very, very good. Here’s how we do it:
1 pound of fish, cut into strips or chunks (We just use whatever Matt catches.)
Batter – you can make your own or purchase a mix. We’ve done it both ways. McCormick’s has a tempura batter that’s pretty good. There’s also Shore Lunch Beer Batter, which I’ve used when I can find it. We always use beer instead of water, even when using a pre-made mix. Or you can make your own by mixing a 12 ounce bottle of beer, 2 cups of AP flour, and seasoning with salt, pepper, and garlic powder.
- Coat the fish in the batter and then fry in cooking oil until golden brown. Place on a paper towel to drain and season with salt as soon as it comes out of the oil.
- For the sauce mix together:
- 1/2 cup plain greek yogurt
- 1/2 cup mayo
- 1/2 lime, juiced
- 1 jalapeno, minced
- 1 teaspoon minced capers
- 1/2 teaspoon dried oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- Warm your corn tortillas. Smear on some sauce, top with fish, shredded cabbage, and fresh cilantro. This particular night, I made a corn and black bean salsa to go on the side.
Now let’s get on to more important things — dessert. I am a huge fan of ice cream, and I like it the same way I like all my treats — loaded with crap. That’s why if I eat ice cream, I typically eat Ben & Jerry’s. And as luck would have it, somehow I stumbled onto a Ben & Jerry’s dessert inspired board on Pinterest. Oh happy day! This board is full of desserts that are loaded with crap. It’s like they created it just for me. Say hello to the Everything but the…… brownie.
It’s loaded with chocolate covered almonds, white chocolate pieces, mini peanut butter cups, and two jars of hot fudge. Serve it warm. Top it with a scoop of Ben & Jerry’s Everything but the…… ice cream. And if that’s not enough, be sure to drizzle a little hot fudge over the top. Disgusting. Simply disgusting.
