Bunny Cake

My mom and I were trying to figure out how long we’ve been making this cake, and we think it has been around 30 years.  We’ve missed a few years here and there when we’ve not gone home to visit my parents, and I’m always sad.  I realize Easter isn’t about a bunny, but there’s something about making this cake that makes it feel like Easter.  Perhaps it’s the time in the kitchen with my mom.  Here’s how we made this year’s cake:

My dad cut a piece of cardboard large enough to accommodate the cake, and then we baked two round cakes and let them cool completely.

We used one round for his face, and then split the other one in three pieces — using two for the ears and one for the bow tie.

Then I covered him with frosting.

After that, I used M&M’s, jelly beans, licorice, sprinkles, and coconut to decorate.

I can’t tell you how much fun I had making this thing.  And the best part about cooking with my mom — she lets me make the mess, and then she cleans up behind me!
