Baked Burritos and Funfetti Blondies

Last week was spring break — the second week of two weeks off.  Two weeks is way too long for spring break, especially since we didn’t go anywhere significant this year.  We visited my parents for a couple days.  The boys went to the farm and fishing a couple of days.  We saw some local sites that we’d never before visited.  What’s left to do?  Have a couple friends over for the day, so Gray’s friends Daniel and Gabriel, who also go to the same school and had two weeks off, came over to play.  And wow — they played hard.

Knowing that hard play quickly works up the appetite, I decided to make burritos for lunch.  I found this recipe for a burrito casserole that sounded fantastic.  But I decided to make it into individual burritos so that every one could have their own.  Below is a modified version of the recipe I found.  If you’d like to make it in a casserole form, just click the link above.

Cheesy Baked Burritos

  • 1 lb 90% Lean Ground Beef
  • 1/2 Medium Onion, diced small
  • 1 package (1.25oz) Taco Seasoning
  • 1 Small Can Green Chilies
  • 6 Burrito Size Flour Tortillas
  • 1 can (16oz) Refried Beans
  • 2 cups Shredded Mexican Cheese
  • 1 can (10.75oz) Condensed Cream of Mushroom Soup
  • 6 oz Sour Cream

Preheat oven to 350°. Brown ground beef and diced onions over medium heat in a large pan.  Add taco seasoning, refried beans, and green chilies.  Heat through. Mix together mushroom soup and sour cream in a separate bowl. Spread half the sour cream mixture on the bottom of a casserole dish. Fill each tortilla with about 1/2 cup of the meat mixture, roll, and then place on top of the sour cream mixture, seam side down.  Spread the remaining sour cream mixture over the burritos.  Top with shredded Mexican cheese. Bake uncovered in a preheated 350° oven for 20-25 minutes.

But that’s not all.  No good host would let a group of boys go without dessert.  Realizing that not everyone loves chocolate as much as I do, I decided to go with something different.  I made these Funfetti Blondies by  After all, who doesn’t love sprinkles?

Oh, I did make one minor change to the recipe.  I used chocolate chips instead of white chocolate chips.  The cook needs to be happy too.
